Oregano 'Zaatar'
A highly aromatic form of oregano, Zaatar (also known as Za’atar or Syrian Oregano) is a popular herb throughout the Mediterranean and Middle East where it is used in baba ganoush, falafel and also herbal tea. With a strong flavour and silvery green foliage, this low maintenance herb is an excellent addition to the dry garden, although it will produce much more foliage if watered occasionally throughout summer.
An easy to grow herb with a shallow root system, water regularly during dry weather and mulch to conserve soil moisture. Avoid watering in winter when waterlogging can cause plants to rot. Drought tolerant once established, foliage is tastiest when not under stress.
