Rhubarb crumble (gluten free and vegan)

Rhubarb crumble (gluten free and vegan)

Ingredients

  • 2 cups brown sugar
  • 2 cups almond meal
  • 1/2 cup pine nuts
  • 1/3 tsp cinnamon
  • 1/2cup Nuttelex

Method

  1. Preheat oven to 165 Celsius.
  2. Combine dry ingredients to make crumble component & melt Nuttelex through.
  3. Combine the following ingredients in a bowl:
    - 4 cups chopped rhubarb
    - 1 cup currants
    - 1/2 cup sugar
  4. Layer half the crumble mix on a greased baking dish, add rhubarb mix, and top with remaining crumble. Bake for 30 mins or until golden.
  5. Serve with your choice of custard, cream or anglaise.
