Growing Jerusalem Artichokes is simple and rewarding. Choose a sunny location with well-drained soil. Plant tubers in early spring, spacing them 30-45 centimeters apart and 7-12 centimeters deep. Water regularly but avoid overwatering. Harvest the tubers in late autumn after the foliage has died back. Store them in a cool, dry place for later use. NOTE: The inulin in artichokes can be difficult to digest by some people which can in turn cause flatulence.
