Yacon
Also known as 'Apple of the Earth', this crunchy root vegetable is low in kilojoules making it ideal for diabetics. Harvest the tubers once the leaves have died down. Leave them to dry to increase their sweetness before peeling them to eat raw, steamed or tossed through a stir fry.
Related to sunflowers, dahlias and Jerusalem artichoke, yacon produces growth and daisy-like flowers to 1.5m over spring and summer. Plant in a raised soil mixed with well-rotted compost. Treat with seaweed solution throughout the growing season. Does best in full sun. When the leaves dies down in late autumn, the tubers are ready to harvest. Simply fork up the entire crop, and harvest the large brown tubers to eat fresh, and use the small reddish rhizomes at the top to replant for next year’s crop.
