Ingredients
- 1.3kg zucchini
- 1.5 tbls salt
- 4 lemons
- 600ml olive oil
Method
- Slice the zucchini into 1.5cm thick wedges and char-grill in a pan or on BBQ
- Make a marinade with the zest of one lemon, the juice of 4 lemons and salt
- Add the grilled zucchini to the marinade and leave for 1 hour
- Arrange zucchini in hot sterilised jars. You can also add other flavours to it such as garlic, chilli and herbs
- Heat olive oil in a pan with left over lemon marinade from the zucchini, to 80°deg
- Pour hot oil over zucchinis in the jars to cover, put on sterilised hot lids to seal
- Use within three months
