Char-grilled zucchini


  • 1.3kg zucchini
  • 1.5 tbls salt
  • 4 lemons
  • 600ml olive oil


  1. Slice the zucchini into 1.5cm thick wedges and char-grill in a pan or on BBQ
  2. Make a marinade with the zest of one lemon, the juice of 4 lemons and salt
  3. Add the grilled zucchini to the marinade and leave for 1 hour
  4. Arrange zucchini in hot sterilised jars. You can also add other flavours to it such as garlic, chilli and herbs
  5. Heat olive oil in a pan with left over lemon marinade from the zucchini, to 80°deg
  6. Pour hot oil over zucchinis in the jars to cover, put on sterilised hot lids to seal
  7. Use within three months
