Arrowroot
This adaptable widespread plant is widely cultivated as an important staple root vegetable, and was one of the early Incan foods. Known in South America as Achira, this canna forms a tall screen of lush foliage, a seasonal windbreak, topped with attractive orange flowers. When baked, it becomes translucent and sweet. The young protein rich shoots may be eaten as a green vegetable, and as the leaves unfurl they may be used to wrap and display food.
