"Paddock to Plate" is a concept that represents the journey of food from its source, the farm, to the consumers plate. It emphasises the importance of a transparent and sustainable food supply chain, where consumers have a deeper understanding of where their food comes from.

Blayne from O.My Restaurant understands the importance of local and fresh produce, reducing the distance and time between harvesting and its consumption. In this Masterclass, Blayne will teach from his own Paddock to Plate experiences:

Your Presenter

I'm Blayne Bertoncello, head chef and co owner of O.MY Restaurant in Beaconsfield.

I've been working as a chef for 18 years. O.MY is a small 25 seater restaurant where we do a seasonal tasting menu that represents the time and place of our local area. We have a farm ten minutes away in Cardinia where we grow all of the fruit & vegetables that we serve at the restaurant.

We also have 9 active working bee hives, compost system and 35-50 chickens for all our eggs. My approach to food is paying full respect to the vegetable and trying to use all the parts of the plant.

Over the last ten years we have built connections with amazing producers for meat and seafood etc. We are working really hard to minimise our food miles and footprint.
