Oregano is closely related to marjoram but has a coarser texture and a stronger flavour. Greek Oregano, known locally as `rigani', has very pungent dried flower-tops that are most commonly used in Greek cooking. The dried leaves are a classic ingredient of `mixed herbs' where they help give `body' to the flavour of dishes. Another easy-to-grow herb that has many uses in the kitchen.
