Rhubarb Crumble (gluten free, vegan)

Don't miss out on our very own delicious, Diggers Rhubarb Crumble. The perfect dessert for any occasion.

Ingredients

♦ 2 cups brown sugar

♦ 2 cups almond meal

♦ ½ cup pine nuts

♦ 1/3 tsp cinnamon

♦ ½ cup Nuttelex

 

METHOD

1 -Preheat oven to 165 Celsius.
2- Combine dry ingredients to make crumble component & melt Nuttelex through.

3- Combine the following ingredients in a bowl:

♦ 4 cups chopped rhubarb

♦ 1 cup currants

♦ ½ cup sugar

4- Layer half the crumble mix on a greased baking dish, add rhubarb mix, and top with remaining crumble. Bake for 30 mins or until golden.

5- Serve with your choice of custard, cream or anglaise.
