Char-grilled Zucchini in olive oil

The ingredients and cooking method for a tempting Char-grilled Zucchini in olive oil

METHOD

1. Slice the zucchini into 1.5cm thick wedges and char
grill in a pan or on BBQ
2. Make a marinade with the zest of one lemon, the juice of
4 lemons and salt.
3. Add the grilled zucchini to the marinade and leave
for 1 hour.
4. Arrange zucchini in hot steralised jars. You can also add
other flavours to it such as garlic, chilli and herbs.
5. Heat olive oil in a pan with left over lemon
marinade from the zucchini, to 80°deg.
6. Pour hot oil over zucchinis in the jars to cover,
put on sterilised hot lids to seal.
7. Use within three months.

◆ 1.5 tbls salt
◆ 4 lemons
◆ 600ml olive oil
