A great vegetable for beginners, a spring sowing will maximise picking for the whole year before it runs to seed the following spring. Silverbeet is tolerant of varying conditions, even part shade, and, if a few plants are allowed to go to seed, it will happily self-sow. Those noting the botanic name will see that it is the same species as beetroot, and it is through centuries of cultivation and selection that one variety has been chosen for its root production, and the other for its leaves. The same five colours are evident in beetroot and silverbeet and make for a colourful display in the garden and on the plate.
