Once a staple food crop of Europe before it was replaced by the humble potato, parsnip is a biennial root crop grown for their creamy coloured flesh which sweetens after frost.

Unusual in that they must be grown from fresh seed each year, parsnips are slow to germinate, but worth the wait. Growing best in poor soils depleted of nutrients (much like carrots), water regularly to ensure even soil moisture, and remove weeds which would otherwise compete for nutrients and resources. Add to your mashed potato for the ultimate creamy mash.
